Going a little fancier this morning. Got my coffee with Skinny Syrup Peanut Butter Cup w/ MTC oil. Serving it up with some Snickerdoodle Crepes!
Note: my numbers are a little odd because I cut the recipe into a third to make it a single serving. Also I had to modify the sweetener mix. Normally I would use monkfruit, but it’s not egg fast friendly.
Crepes: 2 eggs, 1 2/3oz softened cream cheese, 1/3 tsp cinnamon, 1 tsp sugar substitute (I used liquid stevia), and butter for frying.
Filling: 2 2/3 tbsp softened butter, 7g sugar substitute (liquid stevia), 1 tsp cinnamon
Blend crepe ingredients (except butter) until smooth, let rest 5 minutes
Heat butter in non stick pan until sizzling, add half batter. Cook about two minutes, flip and cook another minute.
Mix sweetener and half the cinnamon into softened butter, stir until smooth.
Spread mixture into crepes, roll, and sprinkle with remaining cinnamon.
